I think part of this is perception rather than reality. Yes, there are lots of skills which are learnt in the first year or two of working which aren't learnt at uni, and the learning may be more in depth in some cases, such as if they're working in a specialised area whereas uni generally seeks to cover all of the bases at a more fundamental level. Even if you could quantitatively assess how much learning is done in that first year compared with at uni, that does not necessarily indicate that what was learnt at uni was not relevant or that that content could be more better learnt in the workplace. Also, In the workplace it's rare to be able to put aside the required time to learn the necessary fundamentals which are learnt at uni, and which form the basis which is built upon through on the job training and experience. For example, when we have a new starter in my workplace, we will train them in specific subject matter relevant to our work.
